Ingredients

  • 1 lb beef stew meat
  • 4 cups beef broth
  • 2 cups diced tomatoes
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup green beans, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf

Instructions

  1. In a large pot, brown the beef stew meat over medium heat to add rich flavor.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent and fragrant.
  3. Pour in the beef broth and diced tomatoes, then add the sliced carrots, diced potatoes, chopped green beans, salt, black pepper, thyme, and bay leaf. Bring to a boil.
  4. Reduce heat and simmer for about 1.5 to 2 hours, or until the beef is tender, checking and stirring occasionally. Remove bay leaf before serving.

Notes

For extra flavor, consider adding a tablespoon of Worcestershire sauce. Customize the vegetables based on what you have on hand.
