- 1 lb beef stew meat
- 4 cups beef broth
- 2 cups diced tomatoes
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1 cup green beans, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 bay leaf
Instructions
- In a large pot, brown the beef stew meat over medium heat to add rich flavor.
- Add the chopped onion and minced garlic, cooking until the onion is translucent and fragrant.
- Pour in the beef broth and diced tomatoes, then add the sliced carrots, diced potatoes, chopped green beans, salt, black pepper, thyme, and bay leaf. Bring to a boil.
- Reduce heat and simmer for about 1.5 to 2 hours, or until the beef is tender, checking and stirring occasionally. Remove bay leaf before serving.
Notes
For extra flavor, consider adding a tablespoon of Worcestershire sauce. Customize the vegetables based on what you have on hand.
