- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 ounces) diced tomatoes
- 2 cups tomato sauce
- 1 cup elbow macaroni
- 2 cups water
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated cheese for topping (optional)
Instructions
- In a large skillet over medium heat, add ground beef, chopped onion, minced garlic, and chopped bell pepper. Cook until the meat is browned and vegetables are soft, stirring occasionally. Drain any excess fat.
- Add the diced tomatoes (with juices), tomato sauce, water, elbow macaroni, Italian seasoning, salt, and pepper. Stir to combine.
- Increase heat to bring the mixture to a boil. Once boiling, reduce heat to low, cover, and let simmer for about 20 minutes, stirring occasionally.
- When the macaroni is cooked, stir the goulash and serve hot, topped with grated cheese if desired.
Notes
For a healthier option, use lean ground beef or substitute with turkey. It’s also great for meal prepping.
