Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water

Instructions

  1. In a large bowl, mix together the flour, salt, and sugar.
  2. Add the diced butter and mix until the mixture resembles coarse crumbs.
  3. Stir in the ice water, a tablespoon at a time, until the dough comes together.
  4. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 60 minutes.
  5. Roll out the dough on a floured surface to fit your pie dish, then proceed with your pie recipe.

Notes

Keep ingredients cold for best results. Do not overwork the dough to maintain tenderness.
