- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup water
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- 1/2 cup chocolate chips (melted)
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- Whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
- Add the softened butter, eggs, vanilla extract, milk, and water to the dry ingredients. Mix until smooth. Pour the batter into the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes until a toothpick comes out clean. Let cool completely.
- Whip the heavy cream with powdered sugar and the second teaspoon of vanilla extract until soft peaks form. Fold in the melted chocolate.
- Frost the cooled cupcakes generously with the mousse frosting and serve them!
Notes
Chill the mixing bowl before whipping the cream for better results. Store cupcakes in an airtight container in the refrigerator for up to 3 days.
