Description

Delightful fusion of crunch and freshness, these air fryer rice paper rolls are easy to prepare and healthy to enjoy.


Ingredients

  • Rice paper wrappers
  • Cooked vermicelli noodles
  • Julienned vegetables (carrots, cucumbers, peppers)
  • Cooked shrimp or tofu (optional)
  • Fresh herbs (mint, cilantro)
  • Soy sauce
  • Cooking spray or oil

Instructions

  1. Soak rice paper wrappers in warm water until pliable, about 10-15 seconds.
  2. Lay the soaked wrapper on a clean surface and place a small amount of vermicelli noodles, vegetables, shrimp or tofu, and herbs in the center.
  3. Fold the sides over the filling, then roll from the bottom up tightly.
  4. Preheat the air fryer to 375°F (190°C). Lightly coat the rice paper rolls with cooking spray or oil and place them in a single layer in the air fryer basket. Cook for 6-8 minutes or until golden and crispy, flipping halfway through.
  5. Serve with soy sauce or your favorite dipping sauce.

Notes

Best served fresh and warm. Store leftovers in an airtight container in the fridge for up to 2 days and reheat in the air fryer.
