Ingredients
- Rice paper wrappers
- Cooked vermicelli noodles
- Julienned vegetables (carrots, cucumbers, peppers)
- Cooked shrimp or tofu (optional)
- Fresh herbs (mint, cilantro)
- Soy sauce
- Cooking spray or oil
Instructions
- Soak rice paper wrappers in warm water until pliable, about 10-15 seconds.
- Lay the soaked wrapper on a clean surface and place a small amount of vermicelli noodles, vegetables, shrimp or tofu, and herbs in the center.
- Fold the sides over the filling, then roll from the bottom up tightly.
- Preheat the air fryer to 375°F (190°C). Lightly coat the rice paper rolls with cooking spray or oil and place them in a single layer in the air fryer basket. Cook for 6-8 minutes or until golden and crispy, flipping halfway through.
- Serve with soy sauce or your favorite dipping sauce.
Notes
Best served fresh and warm. Store leftovers in an airtight container in the fridge for up to 2 days and reheat in the air fryer.
