Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract, stirring until well blended.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined, then fold in chocolate chips.
  4. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  5. Let the loaf cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

For a richer flavor, consider adding a pinch of cinnamon or nutmeg. Avoid squeezing out the moisture from the zucchini.
