Ingredients

  • 34 lb chuck roast
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 4 carrots, cut into chunks
  • 4 gold potatoes, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Seasoning the roast: Season the chuck roast with salt and pepper on all sides.
  2. Searing the meat: In a hot skillet, sear the roast for 2–3 minutes per side until browned.
  3. Layering the vegetables: Place sliced onion, carrot chunks, and quartered potatoes in the bottom of your slow cooker.
  4. Adding aromatics: Sprinkle minced garlic over the vegetables and add dried thyme, bay leaf, and Worcestershire sauce.
  5. Assembling the roast: Place the seared roast on top of the vegetable mixture.
  6. Pouring in broth: Pour in beef broth around the roast.
  7. Slow cooking: Cover and cook on low for 8 hours or high for 4–5 hours until fork-tender.
  8. Final touches: Remove bay leaf before serving and let the roast rest for about 10 minutes before slicing.

Notes

Serve with crusty bread or a side salad. Can be stored in an airtight container for up to 4 days or frozen for up to 3 months.
