- 3–4 lb chuck roast
- 1 tbsp olive oil
- 1 onion, sliced
- 4 carrots, cut into chunks
- 4 gold potatoes, quartered
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Seasoning the roast: Season the chuck roast with salt and pepper on all sides.
- Searing the meat: In a hot skillet, sear the roast for 2–3 minutes per side until browned.
- Layering the vegetables: Place sliced onion, carrot chunks, and quartered potatoes in the bottom of your slow cooker.
- Adding aromatics: Sprinkle minced garlic over the vegetables and add dried thyme, bay leaf, and Worcestershire sauce.
- Assembling the roast: Place the seared roast on top of the vegetable mixture.
- Pouring in broth: Pour in beef broth around the roast.
- Slow cooking: Cover and cook on low for 8 hours or high for 4–5 hours until fork-tender.
- Final touches: Remove bay leaf before serving and let the roast rest for about 10 minutes before slicing.
Notes
Serve with crusty bread or a side salad. Can be stored in an airtight container for up to 4 days or frozen for up to 3 months.
