Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the cottage cheese, eggs, almond flour, baking powder, salt, and pepper. Stir until well incorporated to form a thick batter.
- Pour the batter into a greased muffin tin, filling each cup about 2/3 full. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- Let cool slightly before removing from the tin. Enjoy your muffins warm.
