Description

A quick and delicious shrimp fried rice recipe that’s perfect for busy weeknights, combining shrimp, colorful vegetables, and aromatic garlic.

Ingredients

Scale
  • 2 cups cooked rice
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add the garlic and cook until fragrant, about 30 seconds.
  3. Add the shrimp and cook until pink, approximately 3-4 minutes.
  4. Push the shrimp to one side of the skillet and pour the beaten egg on the other side. Scramble the egg until cooked through.
  5. Add the mixed vegetables and cook for 2-3 minutes until they are heated through.
  6. Stir in the cooked rice and soy sauce. Mix everything together and cook for an additional 2-3 minutes.
  7. Garnish with chopped green onions and season with salt and pepper to taste before serving.

Notes

Use day-old rice for the best texture; it’s drier and prevents clumping.
